Ingredients
- 1 1/2 cups all purpose flour
- 1 tsp baking powder
- 1/2 teaspoon salt
- 1 cup packed brown sugar
- 1 stick butter (half a cup)
- 2 eggs
- 1 tsp vanilla extract
- 1/2 cup buttermilk
Preheat the oven to 325 degrees Fahrenheit. Line 12 standard (2 1/2 inch) muffin cups with paper liners.
Combine flour, baking powder
and 1/2 teaspoon salt in small
bowl; mix well. Beat brown sugar
and butter in large bowl with
electric mixer at medium speed
until fluffy. Add eggs and vanilla;
beat until well blended. Alternately
add flour mixture and buttermilk,
beating well after each addition.
Spoon evenly into prepared muffin
cups.
Bake for 20 to 25 minutes or
until toothpick inserted into
centers comes out clean. Cool in
pan 10 minutes. Remove to wire
rack; cool completely.
